Salad Base
  • 2 cups mixed greens such as romaine and spinach
  • 1 cup shredded carrots
  • 1 cup cucumber thinly sliced
  • 1 cup red bell pepper thinly sliced
  • 1 cup fresh herbs such as cilantro and mint
  • 1/2 cup sliced green onions
Spicy Ginger Dressing
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger grated
  • 1 clove garlic minced
  • 1 teaspoon sriracha adjust to taste
  • 1 teaspoon honey or maple syrup for vegan option

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine mixed greens, shredded carrots, cucumber, red bell pepper, fresh herbs, and sliced green onions.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a separate bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, sriracha, and honey until well combined.
  2. Taste and adjust the seasoning if necessary.
Combine and Serve
  1. Drizzle the spicy ginger dressing over the salad and toss gently to coat.
  2. Serve immediately and enjoy!
