  • 2 cups fresh peas or frozen peas
  • 1 medium pear diced
  • 4 oz pancetta diced
  • 1 tbsp olive oil for cooking
  • 1 tbsp butter for flavor
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Method
 

Prepare the Pancetta
  1. In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes.
  2. Remove the pancetta from the skillet and set aside, leaving the rendered fat in the pan.
Cook the Pears and Peas
  1. In the same skillet, add the diced pear and sauté for 3-4 minutes until slightly softened.
  2. Add the fresh or frozen peas to the skillet and cook for an additional 5-7 minutes until heated through.
Combine and Serve
  1. Return the crispy pancetta to the skillet, add the butter, and stir to combine. Season with salt and pepper to taste.
  2. Serve warm as a side dish for your Thanksgiving meal.
