Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1 cup light brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 3/4 cup creamy peanut butter
  • 1 1/2 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 cup granulated sugar for rolling cookies in, optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream together the softened butter and light brown sugar until smooth. Beat in the egg, vanilla extract, and creamy peanut butter until well combined. Mix in the all-purpose flour and baking soda until just incorporated.
  3. Scoop out 1-2 tablespoons of dough and roll them into balls. Optionally, roll each ball in granulated sugar before placing them on the baking sheet, spaced about an inch apart.
  4. Use the tines of a fork to press down on each dough ball in two directions to create a criss-cross pattern.
  5. Bake for about 7-8 minutes until set but still soft. Allow to cool on the sheet for about five minutes before transferring to a wire rack.
