- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream together the softened butter and light brown sugar until smooth. Beat in the egg, vanilla extract, and creamy peanut butter until well combined. Mix in the all-purpose flour and baking soda until just incorporated.
- Scoop out 1-2 tablespoons of dough and roll them into balls. Optionally, roll each ball in granulated sugar before placing them on the baking sheet, spaced about an inch apart.
- Use the tines of a fork to press down on each dough ball in two directions to create a criss-cross pattern.
- Bake for about 7-8 minutes until set but still soft. Allow to cool on the sheet for about five minutes before transferring to a wire rack.
