Ingredients
  

Tortellini
  • 12 oz cheese tortellini fresh or frozen
Vegetables
  • 2 cups cherry tomatoes halved
  • 1 cup fresh basil leaves torn
Cheese
  • 8 oz fresh mozzarella cubed
Dressing
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons balsamic glaze
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Cook the Tortellini
  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente.
  2. Drain the tortellini in a colander and rinse under cold water to stop the cooking process.
Prepare the Salad
  1. In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, fresh mozzarella, and basil leaves.
Make the Dressing
  1. In a small bowl, whisk together olive oil, balsamic glaze, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately on a platter.

Notes
