Ingredients
  

Proteins
  • 1 lb chicken thighs boneless, skinless, diced
  • 1 lb andouille sausage sliced
  • 1 lb shrimp peeled and deveined
Vegetables
  • 1 cup onion chopped
  • 1 cup green bell pepper chopped
  • 1 cup celery chopped
  • 3 cloves garlic minced
Grains
  • 2 cups long-grain rice uncooked
Liquids
  • 4 cups chicken broth
  • 1 can diced tomatoes 14.5 oz
Spices
  • 2 tbsp Cajun seasoning
  • 1 tsp thyme dried
  • 1 tsp bay leaf whole
Others
  • 2 tbsp olive oil
  • 1 cup green onions sliced, for garnish
  • 1 cup parsley chopped, for garnish

Method
 

Prepare the Ingredients
  1. Chop the onion, green bell pepper, celery, and garlic. Dice the chicken and slice the sausage.
  2. Peel and devein the shrimp if not already done.
Cook the Proteins
  1. In a large pot, heat olive oil over medium heat. Add the chicken and sausage, cooking until browned, about 5-7 minutes.
  2. Remove the chicken and sausage from the pot and set aside.
Sauté the Vegetables
  1. In the same pot, add the chopped onion, bell pepper, celery, and garlic. Sauté until softened, about 5 minutes.
Combine and Cook
  1. Add the chicken broth, diced tomatoes, Cajun seasoning, thyme, and bay leaf to the pot. Stir well.
  2. Bring to a boil, then add the rice. Reduce heat to low, cover, and simmer for 20 minutes.
Add Shrimp and Finish
  1. After 20 minutes, stir in the shrimp and return the chicken and sausage to the pot. Cover and cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.
  2. Remove bay leaf before serving.
Serve
  1. Garnish with sliced green onions and chopped parsley before serving.

Notes
